Serves : 6 cups

Ingredients ( 1 cup = 250 ml )
Maida - 2 cups
Red chilli - 5 pieces
Ginger - ¼ in piece
Garlic - 4 lobes
Ajwain (Omam) - 1½tsp
Salt - 1½ tsp
Oil - for deep fry

Instructions
1. Grind ginger, galrlic, red chilli with enough water
2. In a mixing bowl mix the flour, salt and ajwain and pour this dough chilli mix add 1 tbsp of oil and enough enough water to mix a stiff dough. Keep aside for ½ hr.
3. Knead the dough after setting time and divide into equal balls
4. Roll it into thin chapatti and cut first into strips then diagonally into make diamonds using a knife
5. Use a thin spatula to take out diamond cuts from rolling board. Then drop in oil it will separate. But be gentle when you gather.
6. Deep fry in hot oil with medium frame keep turning constantly when it is golden in colour, drain it in paper cover.
7. Cool down and store it in a air tight container. Enjoy as a tea time snack

Rava Dosa

This is a popular South Indian food, rava stands for sooji hence its name as the main ingredient added with rice flour, chopped onions, curry leaves, herbs and spices are added. We can add ginger, green chilli, cashews to this batter hence it makes more healthy and tasty. It is crisp and netted texture, if u make this batter thin. Allow the soaking time for 30 to 40 mins to get the texture and crispness.




Paneer paratha recipe

Ingredents
Wheat flour - 1 ½ cup
Salt - 1 tsp
Oil - 1 tbsp
Water - as required

For stuffing
Paneer / cottage cheese 1½ cup grated
Turmeric - ¼ tsp
Red chilli - 1 tsp
Garam masala - ¾ tsp
Chaat masala - 1 tsp
Kasoori methi - 1 tsp
Coriander leaf - 3 tsp
Salt - to taste

Method for dough

In a mixing bowl take wheat flour salt and ghee. Mix it with your fingers, add little water, gather to form a soft pliable dough. Kneed it well. Dough should not be too tight or too loose, it should not sticky allow it to rest for 30 mins

Preparation for stuffing

Add all those spices to the crumbled paneer ie salt, haldi, chilli powder, garam masala, chat masala, kasoori methi and coriander leaves. Mix well so that spicy powders are uniformly mixed with grated paneer. Stuffing for paneer paratha is ready.

Preparation for stuffing
1. Make equal size box out of dough
2. To dust use the maida / wheat flour roll them to thick small circle. Thick at center, thin at edges. Keep 2 tsp of stuffing in the center.
3. Seal it nicely by pulling all the edges to the center. Repeat the same with all the dough and stuffing.
4. with the help of dry flour, roll the parathas into thick or thin disk as you prefer.
5. Heat a griddle, transfer the paratha to griddle and cook them both sides by distinct oil till both sides as golden spots.
6. Soft, delicious, hot paneer parathas are ready to serve enjoy with pickle.
